Soup for your gut flora with roots and ginger

Treat your microbiota to a comforting root-vegetable and ginger soup! Rich in gentle fiber, ideal for promoting calm digestion. Ginger and turmeric reduce inflammation, promoting optimal digestion. Gluten- and lactose-free, it helps prevent bloating and discomfort.


Ingredients (for 4 people) :

  • 2 carrots
  • 2 parsnips
  • 1 sweet potato
  • 1 turnip
  • 1 onion
  • 2 cloves of garlic
  • 1 piece of fresh ginger (2-3 cm)
  • 1 liter of gluten-free vegetable broth
  • 2 tablespoons of olive oil
  • 1 teaspoon of turmeric (optional, for its anti-inflammatory benefits)
  • Salt and pepper to taste
  • Fresh herbs to serve (parsley or cilantro)

Instructions :

  1. Prepare the vegetables :
    • Peel the carrots, parsnip, sweet potato, and turnip. Cut them into pieces.
    • Thinly slice the onion.
    • Crush the garlic and grate the ginger.
  2. Sauté :
    • In a large pot, heat the olive oil over medium heat.
    • Add the onion, garlic, and grated ginger. Sauté for 2-3 minutes until fragrant.
  3. Cook the vegetables :
    • Add all the chopped vegetables and mix well.
    • Add the turmeric (if using), salt, and pepper.
  4. Add the broth :
    • Pour the vegetable broth into the pot. Bring to a boil, then reduce the heat and simmer for about 25-30 minutes, or until the vegetables are tender.
  5. Blend the soup :
    • Remove the pot from the heat and blend the soup using an immersion blender until smooth. If the soup is too thick, add a little water or broth.
  6. To serve :
    • Ladle the hot soup into bowls. Garnish with fresh herbs such as parsley or cilantro.
